Happy Friday everyone! Most Fridays upon finishing work we head to an all night disco party home, put our pyjamas on and drink all of the gin. Sometimes with friends, but usually alone with our cats. Luckily, when we can persuade our pals (they do exist, honest!) to hang out with us, they all love a simple G&T too. Very fortunate, as we can be predictably lazy when it comes to the art of mixology. However, last weekend we decided to step out of our boozy comfort zone and hit the hard stuff. Fruity pink cocktails! When excitedly hitting the supermarket, we quickly realised that neither of us really knew how to make anything other than a snowball, so we had a little helping hand from the experts at thebar.com.

Luckily for us, thebar.com is really simple to use, with a handy search function on the main page, you just type in a spirit that you like (it doesn’t have to be gin!) or a cocktail you would like to try and hundreds of tasty recipes will pop up in seconds. As most have been sent in by members of the site, there are lots of fun ideas with suitably charming names, and well, they just all look so pretty. As a gift to you our loyal readers, we decided to try and throw ourselves a She and Hem style cocktail party. With added massive birthday cake. No, it wasn’t anyone’s birthday, we just like massive cakes, ok?

I’m pretty partial to a Prosecco (not that I like to wine on about it…), so I was very keen to try a French 21. Oh là là indeed! For some of the cocktails, we went a wee bit rouge with the ingredients to suit our tastes, but with the French 21, the only switch we made was using a lemon peel spiral rather than lime spiral. These were used a lot elsewhere, and we didn’t want them hogging all of the limelight…

After lining up our top three cocktails from the evening, there was no clutching at straws and, in a strong field of creatively named confections, the clear winner was the decidedly more Ronseal Archers Peach Schnapps & Cranberry Juice. Easy to make, refreshing and fun. It was sodalicious!

Whisky Business: Tunis Cake and Christmas Cake Pops

Every year during the weekend before Christmas day, myself and Jo and our BFF’s like to get together for a 24 hour food marathon. It revolves around a huge Christmas dinner with all of the trimmings and our annual viewings of Elf, Home Alone and The Muppets Christmas Carol. Each year we alternate who provides each course of our Christmas feast. This year, Jo treated us to a titillating turkey and it was my turn to don my apron and get baking some festive puddings. I’ve always wanted to attempt Cake Pops, so when I saw this recipe, I thought it was the perfect time to give them a go!

Christmas is a time for overindulging, so I decided to make two puddings, with the cake pops acting as more of a cheeky snack  to nibble on throughout the night, rather than a filling dessert. This year I was inspired by the Christmas edition of The Great British Bake Off, in which Mary Berry (love her!) made an incredible looking Tunis Cake.

Whisky Business: Stir-up Sunday Christmas Pudding

Today is Stir-up Sunday, the traditional day to make your Christmas pudding! For many, this wooden spooned affair marks the beginning of the festive season and, as we sure do like an excuse to get festive, we decided we would don our Christmas jumpers and get mixing.

Having scoured the internet for the perfect pudding recipe, we didn’t find one that exactly worked for us, despite the fact that they are all essentially the same.  Awkward, us? Eventually we decided to adapt Delia Smith’s tried and tested recipe (which can be found here). We had a lot of the ingredients, such as the flour, sugar and spices already and we substituted some of Delia’s items for things we had to hand rather than spend the extra money. A quick trip to Sainsbury’s to stock up on the extras and we were ready to go!

Whisky Business: Pumpkin Pie

Last Saturday rain delayed play when it scuppered our plans to go and see some fireworks. Boo hiss etc. We were feeling a little glum as we sat inside looking out at the gloomy weather and decided that we would our swap soggy sparklers for soggy bottoms and attempt to bake ourselves a feelgood pie. A tasty Hummingbird Bakery pumpkin pie to be precise! It was also a nice excuse for us to try out a different style of blog post. The sort where we make stuff! Good heavens.

Ingredients

Basic Pie Crust dough, unbaked

1 egg

425g tin pumpkin puree

235ml evaporated milk

220g caster sugar

1/4 teaspoon ground cloves

1 teaspoon salt

3/4 teaspoon ground cinnamon, plus extra to decorate (or tonnes if you are Victoria!)

1/4 teaspoon ground ginger

1 tablespoon plain flour

Lightly wipped cream to serve
